Boil the beets, peel and dice.

Add the kale and diced apples

In a bowl, mix the yoghurt olive oil, vinegar, and garlic.

Season the salad with salt and pepper and sprinkle with yoghurt sauce.

Mix again, garnish with walnuts and serve.
